Shana Gallagher opened Shana's Bakery and Cafe last week just outside Victoria Harbour.

Shana Gallagher has been baking up a storm for years but has always had a hunger for more.

"Our end goal was to get into a retail space and here we are," Gallagher said.

The award-winning baker opened Shana's Bakery and Cafe at 14558 Hwy. 12 this past Tuesday. The location was formerly Cheeky Mama Bakery & Cafe.

Gallagher had been running her business from her home in Victoria Harbour for the past seven years, in a separate inspected kitchen, where she took orders by text and phone.  All baked goods are made for exceptional flavour with top quality ingredients.

She is known locally from her years at the Southern Georgian Bay Farmers' Market.

"I have a pretty loyal, local following that I hope will grow now that I'm available to them all the time. The previous customers of this establishment have been loyal too," Gallagher said.

Shana's Bakery and Cafe offers breakfast, lunch and the bakery where customers can eat in or take their food to go.

For breakfast, they offer a breakfast sandwich, muffins, scones and little doughnuts grilled panini sandwiches and a daily soup offered at lunchtime. Baked goods include giant cookies, butter tarts, brownies, date squares, lemon squares, scones, cupcakes, cupcake cheesecakes, muffins and little donuts.

They also have gourmet coffee and teas along with cold beverages. The shop is also selling Mundy's Bay Honey and Windlee Farms Maple Syrup.

"I enjoy being able to connect and see the people coming in. It's nice to see people actually enjoying the food," she said.

The location offers a quick stop for people on the road, as it has two driveways.

"Larger delivery trucks and service trucks can pull in, grab something and keep going," she said.

Her logo is an oven mitt with a heart on it. The mission is "to serve everyone with the same care and love that we would show to our own friends and family."

Gallagher works with her son Chris and Nicole Vachon, who worked at Cheeky Mama's.

"We are very happy to be here. It's something I've been trying to arrange for years."

The shop's hours are Tuesday to Saturday 8 a.m. to 2 p.m.
