February 6, 1932 – June 26, 2022

Carol Jackson of Etobicoke, passed away peacefully with her family at her side, at Trillium Hospital in Mississauga in her 91st year after battling respiratory issues. She is preceded in death by her husband Bill to whom she was married for 54 years.

Carol is survived by her five children Carol Jackson, Linda (husband Harold) Schuch, John (wife Nicola) Jackson, Jim (partner Gordon) Jackson and Nancy Jackson, her four grandchildren Brittany, Mieka, Karl and Anthony, and three great-grandchildren Yannick, Wesley and Julian.

Carol was born on February 6, 1932 in Poklek, County of Zagreb, Yugoslavia (now Croatia). Orphaned at the age of 7 during WWII, incredibly Carol travelled alone via the Red Cross, by rail across Europe, followed by ship to Canada in order to live with her adoptive parents in Sudbury, Ontario. Years later, after moving to the Toronto area and while working at the Township of Etobicoke, she met William (Bill) Jackson, a land surveyor, who was very smart but always a tease. They were married in Toronto in 1951 and raised their large family in Etobicoke and in the Penetang/Clearwater Beach area.

Nothing meant more to Carol than her family and home. She was the consummate homemaker who loved the holidays and drew the entire family together year after year. She was incredibly talented in cooking, baking, decorating, china painting, sewing, knitting and gardening. She also loved politics and kept herself informed right through to the end. She was the epitome of a lady, always graceful and kind, but she was also the definition of a strong woman through the extraordinary challenges she faced in the course of her life. Carol was a remarkable, beautiful woman who could have written a book about her life experiences.

The family wishes to thank Dr. Milan Patel at Trillium Hospital who worked miracles with Carol over the years, and Dr. John Granton at Toronto General Hospital for his wisdom and advice. We are eternally grateful and we will never forget the compassion he showed toward Carol. In lieu of flowers, donations can be made in Carol's memory to Trillium Health Partners Foundation via www.trilliumgiving.ca or, Toronto General Hospital via www.uhnfoundation.ca.

Favourite memories of Carol can be shared on the Penetanguishene Funeral Home website via www.arbormemorial.ca/en/penetanguishene. Carol will be interred with her Husband, Bill at Lakeview Cemetery in Midland, Ontario. At her request, no memorial service will be held.
